An inspired Parisian-style evening featuring Chef Dame Emma Birdsall at Red Cow , part of the acclaimed Ethan Stowell Restaurants. Each course will be paired with exclusive wines from Lisa Warr-King Packer's small- production Mana Vintners , where handcrafted wines reflect both artistry and a passion for Washington terroir. Throughout the evening, guests will hear stories of building careers in hospitality, launching a boutique winery and creating memorable dining experiences. Joining the table is Dame Deba Wegner, President of Recipe for Success and a respected hospitality leader whose decades of experience, love of gardening and creative spirit have inspired countless culinary collaborations.
Dame Emma Bird Song
Chef Emma Bird Song grew up amid the rolling vineyards and coastal air of Sonoma County, a landscape that shaped her early love of fresh, expressive ingredients. Her culinary path began in earnest at the Culinary Institute of America in Napa County, where she built a strong foundation in classical technique and kitchen discipline. After graduating, Emma headed to New Orleans, immersing herself in the city’s vibrant food culture. There, she deepened her mastery of Creole cooking and refined her French techniques under chefs who valued bold flavors and tradition.
Emma eventually made her way to Seattle, bringing her Southern and Californian sensibilities to the Pacific Northwest. She cooked in several of the city’s beloved kitchens, including Damoori Kitchen and Tavolàta, before stepping into her current role as head chef at Red Cow. At Red Cow, she continues to evolve her French - driven approach while building meaningful connections with the Madrona community. Her menus reflect her signature balance: technique - forward, ingredient - respectful, and always grounded in a sense of place.
Outside the kitchen, Emma is known for her creative spirit and love of craft. She spends her free time crocheting, exploring Washington’s trails, and relaxing at home with her partner and their two charismatic cats, Ghoul and Lady. Whether she’s developing a new dish or stitching a new pattern, Emma brings the same curiosity, care, and joy to everything she touches.

Lisa Warr-King Packer
Lisa Warr - King Packer has spent more than 16 years deepening her connection to wine and to Washington State’s extraordinary capacity for growing it. After a successful career in tech marketing, she followed her passion into winemaking, founding Warr - King Wines in Woodinville in 2011. Guided by a minimalist philosophy — letting the vineyard speak — she built a portfolio of bold, structured, fruit-forward wines with refined, elegant finishes. Her commitment to quality and close relationships with growers earned Warr - King a devoted following and established it as a respected name in the Woodinville wine community.
In 2022, Lisa made the bittersweet decision to sell Warr - King Wines, taking time to step back, recharge, and reflect on her next chapter. She has since returned with renewed clarity and intention through Mana Vintners, a more personal and focused expression of her winemaking journey.
Inspired by her Hawaiian roots, Mana Vintners draws its name from the Polynesian concept of spiritual energy and elemental power present in people, places, and things. This philosophy shapes every aspect of her work. With a smaller, more intentional production, Lisa crafts wines that honor Washington’s distinctive terroir while celebrating the growers and natural forces behind each vintage.
Her wines remain balanced and expressive, combining structure with purity and a sense of place. Through Mana Vintners, Lisa tells a deeper story — one rooted in heritage, connection, and the belief that wine can capture both landscape and lived experience.
